tonight’s dinner is brought to you by the letter E

E for Easy. A while ago, my friend Helen asked me to share recipes with her, because she was bored with what she was feeding her family. I’m afraid I haven’t done a very good job in the recipe sharing department, and I hope tonight’s dinner will make up for it. This is one of the easiest things I think I’ve ever made, and if I do say so myself, it was darn good.
Costco is my new favorite place to shop. We went there on Saturday looking for a kind of liquid soap we’d gotten there once before. Instead we found Parmesan and spinach filled ravioli, and a great huge jar of bruschetta topping. So tonight, in approximately 15 minutes, I
- boiled some water in which to cook the pasta (4-5 minutes at barely a simmer, or they’ll pop open),
- sauteed some fresh spinach in olive oil, and anointed it with some of our favorite seasoning — Sandwich Sprinkle from Penzey’s,
- grated some Parmesan cheese,
- opened the jar of bruschetta topping, warmed it for 30 seconds in the microwave, and
- layered the above ingredients, spinach first, tomatoes last, cheese in between each layer, and served to a hungry and pressed-for-time family.
The verdict? YUM!!
Tomorrow I’ll tell you why Ravelry is going to be my downfall. Tonight I’m going to knit.
PS — I really did comb my hair yesterday, though you’d never know it by looking at that picture of me. I didn’t even realize it until I saw the picture up on the blog. Sheesh! It’s a good thing my mother doesn’t “do the internet”. She’d be appalled!
